I hope that this will be a worth while experiment and perhaps something I can look back on and say, wow, I have grown as a person (hopefully not sideways). Yesterday I tried out my new running shoes that I bought at Runabout Sports, a local store which I highly recommend. They are the Mizuno Wave Inspire 5 and I have a few words about them: deliciously comfortable and they make running a pleasure. My food creation of the day so far is Pumpkin Oatmeal. This recipe is a product of having left over pumpkin and a love of oatmeal. Sorry that there is no picture, I was a little late for work this morning.
Pumpkin Oatmeal
Serves 1 person
Ingredients
1 Cup soy milk of choice or water
1/2 Cup rolled oats, quick cooking or old fashioned (my cooking time is with old fashioned)
3 Tbs canned pumpkin
1 Pinch of salt
1/2 Tsp cinnamon
1/4 Tsp ground ginger
1 Dash of ground nutmeg
Optional: sweetener of choice
Method
Over medium low heat in a small sauce pan heat the milk or water to a simmer. Add the oats, pumpkin, and salt while stiring. Simmer for 3-4 minutes (depending on how thick you want your oats, you may want less or more time) while stirring continuously. Add the cinnamon, ginger, nutmeg, and if you like a drizzle of honey, agave, or dash of stevia (my preferred choice). Take off the heat and let rest for a minute or so.
